Aubergine Bhaji
This bhaji can use other vegetables mushroom or courgettes. Careful with the chilli I find, maybe the chilli is more potent with the garlic and ginger
Prep Time 10 mins Cook Time 40 mins hob Total Time 50 mins Ingredients 2 tablespoons of oil 500g Aubergines 1 Onion chopped in what ever shape you like in a soup 2 clove garlic crushed/sliced 2.5 cm ginger grated or finely sliced 1/2 teaspoon dried chilli or to taste 1 teaspoon of ground tumeric 2 teaspoons of garam masala or curry powder 1 tin tomatoes
Instructions
- Fry the onion in the oil for seven-eight minutes with medium heat until soft.
- Whilst the onion is frying cut the aubergine into 1cm round slices then cut the slices into 1cm wide fingers.
- Add the garlic and aubergine increase the heat, and fry for two minutes.
- Add the ginger, tumeric, chilli and tomatoes, break the tomatoes with the a wooden spatula or spoon, and simmmer for 15-20 minutes unitl aubergine is very soft.
- Add the garam masala/curry powder and continue to cook for 4-5 minutes.
