Mung Beans with Brussels Sprouts in a Sesame Oil Dressing

  1. Boil the mung beans according to the packet instructions, and drain.
  2. Shred the Brussels sprouts with a knife of food processor.
  3. Heat the oil in a large pan over medium-high heat.
  4. Add the shredded Brussels sprouts and cook until tender and lightly browned, 4 to 5 minutes.
  5. Stir in the mung beans and cook until heated through, 1 to 2 minutes.
  6. Toss with the sesame dressing, serve hot or cold.
