Pasta Arrabiata
This recipe comes from Giuliano Hazan The Classic Pasta Cookbook, which I have adapted.
This is a very simple pasta dish, add a tin of chickpeas or beans to up the protein content.
Ingredients
- 7 tablespoons of olive oil.
- 2 tins of plum tomatoes.
- 1 teaspoon dried chilli flakes, tune this to your own taste.
- 1 clove garlic crushed or finely diced.
- 500g pasta of choice.
- black pepper.
Instructions
- Heat 6 tablespoons of oil, add the garlic and chilli until the garlic changes colour.
- Add the tomatoes, crush the tomatoes with a wooden spoon in the pan, and cook until the tomatoes are reduced (30-40 minutes).
- Add remaining tablepoon of oil, and pepper to taste.
- Cook the pasta according to the packet instructions.
- Toss the pasta with the cooked sauce. Serve straight away
