Pasta Arrabiata

This recipe comes from Giuliano Hazan The Classic Pasta Cookbook, which I have adapted.

This is a very simple pasta dish, add a tin of chickpeas or beans to up the protein content.

Instructions

  1. Heat 6 tablespoons of oil, add the garlic and chilli until the garlic changes colour.
  2. Add the tomatoes, crush the tomatoes with a wooden spoon in the pan, and cook until the tomatoes are reduced (30-40 minutes).
  3. Add remaining tablepoon of oil, and pepper to taste.
  4. Cook the pasta according to the packet instructions.
  5. Toss the pasta with the cooked sauce. Serve straight away
