I am never without peanut butter, this recipe uses either salted or red skin peanuts.

I use a 950W microwave, a food processor with blade is required for this recipe, which can run for several minutes.

Peanut Butter

I am never without peanut butter; variations depending whether starting with salted or red skin peanuts, or smooth or crunchy

  1. If using salted peanuts, wash out the salt by running tap water through the nuts in a colandar
  2. Place the nuts in a microwaveable bowl for 8 minutes, stirring occasionally. This drys the salted nuts, and adds flavours to red skin nuts.
  3. Allow the peanuts to cool before placing in the food processor,
  4. If making crunchy peanut butter, grind in a food processor until just large crumbs, scoop out a 200g and set aside.
  5. If using red skin peanuts, add the oil. Add any flavourings then grind again, stopping to scrape down the sides if necessary, until you have something spreadable.
  6. Stir in the reserved nuts, if crunchy, and spoon into a jar.
