Scrambled Tofu with Onion

I generally try and avoid 'substitutes', but this can be served as a breakfast item, on toast or in a jacket potato.

  1. Drain the tofu from the water by placing the tofu in a sieve over the sink, use kitchen paper as well if you want.
  2. Fry the onions in the oil gently until soft.
  3. Using a spatula, cut up the tofu in the pan to give it that scrambled look.
  4. Add the turmeric, and stir in to get an even yellow colour.
  5. Once incorporated, add the vegetable broth (1 tablespoon at a time) bringing the broth to a boil and allowing to fully absorb into the tofu each time.
  6. Remove from heat, and serve in whichever way you choose.
  7. Variations: Other spices can be used eg (smoked) paprika, chilli, fresh ginger. Sprinkle with cut chives is another.
