Slowcooker Red Lentil Soup
This is one of my favourites soups, and one of my favourite slow cooker recipes. Serves four easily
Prep Time 15 mins Cook Time 15 mins hob/ 6-8 hours slow cooker low or 3-4 hours high Total Time Up to 8 hours 15 minutes
Ingredients
- 1 tablespoons of oil
- 250g of red lentils
- 1 Onion chopped in what ever shape you like in a soup
- 1 Large Carrot diced
- 1 Stick of celary sliced
- 1 1/4 litre of veg stock (I use heaped teaspoon of marmite/yeast)
- 1 tin of tomatoes
- Dash soy sauce
- Pepper
- 1 tablespoon of parsley (optional)
Instructions
- Fry the veg in the oil for eight minutes.
- Whilst the veg are frying fill the slow cooker with the lentils stock and tomatoes, break the tomatoes with a wooden spoon.
- Add the fried veg, and as much pepper as you want to the slow cooker
- Put the slow cooker on for 6-8 hours low or 3-4 hours high...Wait add the parsley before serving if using.
